Story

About The Farmer

Mauricio Escalon was born into a coffee-producing family. In the 1870s, his greatgrandfather, Pedro Jose Escalon, started with a farm in Santa Ana, later establishing El Molino (The Mill), the first of the industry. At the end of the 20th century, the family business fell on hard times due to the coffee price crisis. However, with the accession of Mauricio, he gained his second wing. In 2003, Cafescal brought an understanding of the philosophy of quality coffee. The name of the company is “Cafes Escalon Calderon” Calderon is Mauritius' mother's surname.

Now the family business has 10 farms and 2 Mills. The size of the farm is 37 hectares. Mauricio is the General Manager of Cafescal and is responsible for the administration and management of agricultural processes. Even though he had an architecture degree and working community-building experience, his passion for coffee brought him back to the family. Las Delicias took part in the Cup of Excellence in 2003, 2015, 2016, 2017, 2018 and 2019.

Processing

All coffees are carefully selected by hand before being delivered to the collection centre. Then the fruits are placed in containers, from which all air is completely pumped out. Anaerobic fermentation lasts 72 hours in a cool environment. The coffee is then dried on the veranda for 3 days and on African beds for 24 days. At the same time, coffee is protected from sunlight every day at noon.
